I went this evening for the first time with dining companions who adore good food, and just happen to be very Latin. Paco, the chef, has a motto for the restaurant, which is ""Oh my God!? He's right, and indeed, Se?or. We ordered a seafood ceviche for starters (fresh, with baby shrimp and a modest kick), and it's served in a round of pineapple. Elegant touch, I thought, and creative. The guacamole couldn't possibly be better, or fresher. \r \r For dinner, most of us tried the enchilada special. It consists of four enchiladas made with 6 outstanding, clever moles mentioned by another reviewer here (pistachio, macadamia, etc.). We had them stuffed with chorizo, beef, chicken and white cheese. Perfect combo of sweet, salty, smooth - all very luscious. Paco knows what he's doing, and I would say he is a genius. I've never had a more outstanding enchilada combo anywhere. Another person tried the poblano special, which was to die for. Everything about this food is genuine, beautiful and decadent. I am going to crave their food, and every other Mexican restaurant is going to seem like a run-down factory since I tried New Rebozo. The menu looks intriguing, too, and also covers all the bases - delivering traditional entrees with a creative twist. For dessert, Paco brought us his homemade chocolate ice cream, which had a jalapeno kick. Oh my God - that was brilliant! Sweet and smooth chocolate ice cream with a kick? It sounds challenging for a novice, for sure, but it's my new favorite flavor! How did he do that? Service is friendly, professional, courteous and efficient.\r \r We also had a pitcher of lime margaritas (mmmmm!). They went down like cool limeade. Sweet perfection in a salted glass. It's kid friendly here, casual, romantic, clean and friendly. Paco talks to all the diners, and he kissed us goodnight. I feel like he's going to be our new best friend. Pros: Paco is a loveable genius, and is second to none. Cons: None. Period.
