In a residential neighborhood in South Seattle is the pizzeria you wish was on your block. Flying Squirrel handles the classics with aplomb but isn't afraid to test the boundaries of pie-making. The two-room storefront has bar seating for those who want a local microbrew while waiting for their takeout order, as well as a sit-down section for local families and couples on date night. Pizzas come topped with meats from purveyors like Salumi and Zoe's, ranging from the traditional pepperoni and mozzarella to the more adventurous pulled pork with cotija cheese. The crust is near-perfect, with just the right amount of chew and char. Get there early, as they've been known to run out of dough on busy nights.
