Be prepared for a solid, succulent meal. This is a Texas steak house: it isn't Ruth Chris, it isn't Fogo de Chao, and certainly not the Golden Coral. No, this is a Texas steak house. Don't expect frills, cheap items, or infinite portions unless you dine on Monday evening where the Smoked Sirloin is served to order all you can eat. The portions of the normal platters are enough to satisfy the largest of my traveling companions and left me too full for desert and glad I didn't order one of the tasty appetizers. I had the pleasure of sampling the ribs and smoked sirloin (best if ordered medium rare). The ribs were par with Outback or Chili's. However, the true delight is the smoked sirloin and service. \r On the former, the smoked sirloin is tender, juicy, slowly smoked and never touches an actual grill so it is always pink/reddish in the middle and even at it's rarest, a safe option. It is seasoned with peppercorn and they leave the tasty fat (quarter inch) strip which I'd recommend you eat with the meat as it contains so much flavor. The portions are very formidable. Just 3 large strips 6""x1.5""x0.5"" thick was more than enough even with the additional ribs, side salad and side saddle (I recommend the chili cheese enchiladas which are reminiscent of chili cheese fries). They may have learned from past mistakes as the dressing was served on the side and the waiter insisted I taste it to ensure my liking. On that note, I can't commend the service of our waiter, Clay, enough. Exceeding 5 star standards, he was clairvoyant to know our needs before we knew them. Cultivated from over 5 years of wait staff experience, our glass was never half empty, his knowledge of his craft and the menu was prodigious, humbleness of noble ancestry, and even advocated on my behalf a returned item that was not as ordered. If only such virtues of service, integrity, zeal and dedication could be found in a future president he/she'd surely be the greatest and have my vote. Pros: service, signature menu items, portions
