We love Mingo in Beaverton for lots of reasons (comfortable, warm space ... great patio in the summer ... really nice staff ... always good food). In my opinion, they make the best pizza in town. My favorite Mingo pizza is made with heirloom tomatoes, a small amount of cheese and crispy prosciutto. The crust is thin and crisp ... always cooked to perfection. They only make this pizza when heirloom tomatoes are in season so we go to Mingo as often as possible during that time of year. They do make excellent ""other"" kinds of pizzas all year long! My husband's two favorite dishes at Mingo are their fresh halibut (when in season) and their sugo pasta.
