I don't know how to describe the subtle differences in cuisine between the old and new chef at New Wave other than to say it is my kind of food. The new menu is seemingly healthier in that it is not drowned in butter and cream...though the food was good at New wave before now i feel that it is better because the flavor style and presentaton are still top notch but at least now I do not feel that my waistline HAS to suffer...not that you can't eat cheesy delicious items or burgers but the carpaccio is great!
