When my hard drive crashed, the people at the Apple store recommended Heroic Efforts to me as the best and most reasonably priced data recovery service - and they were absolutely right.
Heroic Efforts explained the process, what my options were, and what they could do for me. They took the time to explain the finer details and never lost sight of the fact that it is a very painful situation to have to put a monetary amount on the photos, music, and personal data I had on my computer. They were also quick to call me once they knew my data was recoverable. Also, they have a flat rate, so they don't charge by the minute or MB.
To anyone out there who is now facing that situation: I'm so sorry. But these guys are the ones to help you through it.
