Many of you will figure out who I am. I spent 15 of the best, and worst years of my life employed at La Caille. Those years made me who I am today, and that's not a bad thing. I've rated it 5 stars for that reason. I'm shocked at many of the things being said in this forum, and I'm saddened at how far it seems to have slid downhill. I cannot comment on the food or rodent infestation as I left in November of 2004. I have to say that back then, the peach duck and the lamb were always personal fav's of mine. One thing I feel I need to clarify to the servers who don't seem to understand is that the 20% Service Fee on events is NOT a gratuity. It is a Service Fee that goes to the house and helps to cover operating costs. Banquet servers are paid a higher hourly rate than tipped shifts. When I was selling events, I always made this clear to the brides and their families. A gratuity is for exemplary service and if they chose to leave a gratuity to be distributed amongst the banquet staff, they were more than welcome to. It didn't happen often, which sort of begs the question as to why. (Over a two week period, most of you averaged $25 per hour between tipped shifts and banquets. I know. I did the math.) Additionally, the 20% Service Fee for banquets is pretty much an industry standard for what is perceived to be high-end banquets. Where I do banquets now, I'm not involved in the sales, but I give my crew a pep talk before the start of the event, and we get an additional gratuity about 50% of the time. As for the EPA Superfund contamination content of the soil. I read the report. I was at the meeting with the EPA. LC property is NOT contaminated. I'm saddened that Russell has opted to show his lack of respect for the staff in this forum. Word to the wise, earned respect will get you everywhere. Mary, you and I spent many an hour together writing things such as the back of the old menu. I'm glad you've still got that verve for LC!
