Every hotel/casino in Vegas has its own 24-hour cafe. I have to say that the Coronado Cafe is the best I've visited in Vegas. The 24-hour menu is varied and would satisfy almost everyone at any time. The ""specialty"" of the house is their Chinese cuisine menu. It's not lengthy, but the three items I tried were excellent in flavor, if not 100% traditional in ingredients. The shrimp with lobster sauce was the best I've had in decades. Yes, I said DECADES. The hot & sour soup was tasty, but not quite authentic. The ""hot"" in this soup traditionally comes from white pepper. The cafe's version used chili peppers. I ate breakfast here for 3 days straight and enjoyed each meal. At dinner time, it definitely gets busy, so you can wait in line sometimes.
