So I have lived in Denver all my life and have had the pleasure of dining at some of the best restaurants the city has to offer. I have to say that Sullivan's is at the top of my list. I have been there several times before and it seems to get better every time I go. My date and I arrived 20 minutes before our reservation time and were greeted by a warm and inviting hostess who offered to seat us right away, but we decided to enjoy a drink at the bar first and listen to the live Jazz. When we were seated in the dining room we were greeted right away by a smiling and relaxed server who was engaging and seemed genuinely happy to see us there. The service is what sets Sullivan's apart from say...a Capitol Grille....The service is top notch without being stuffy. Our server made great reccomendations, he talked me in to the nights steak special even though I came in with my heart set on a Rib-eye. I knew he wasn't just trying to sell me because the steak special was 10 bucks less than the steak I had in mind! I ordered the Del Monico Scampi style and my date ordered the Bass, along with the servers recomendation of Aug Ratin potato's and sauteed spinach. The wine list is a bit intimidating at first but we settled on a bottle of Emerald Hills Cab after our server told us that the wine maker is a pilot from Colorado and Sullivan's is the only restaurant in Denver that carries it. (how did he know that?!) The food came out perfect and we enjoyed an equally perfect evening. In a day and age when servers seem to be more ""order takers"" than ""hosts"" and ""menu experts"" it is nice to find the exception to the rule. The managers were roaming the floor the whole night and one of them named Amber even came to our table and spent some time making us laugh and making sure everything was perfect. You usually only meet the managers when things go wrong, not this time. I almost forgot, do yourself a favor and try the knockout martini when you go. Pros: Service, Food Cons: none!
