As far as NC bagels are concerned these are OK. I moved here from Brooklyn about 3 months ago and to compare these bagels to NY bagels is a total joke. Believe me, they are nothing like real NY bagels. These so called NYers that are raving about these bagels must be from Long Island where you can't get a decent bagel either, but they think they're good. I'm not sure of their baking process, but to bake authentic bagels you first have to par boil them and then bake them. If they are not making them that way, then it's a totally different animal. Never mind not using NY water, which has a distinctive taste. I knew it immediately, even before I bit into one that they were different. They were about half the weight of a real bagel. They were light and fluffy. NY bagels are a little weighty and dense. Glad to see they have Boars Head products though. I also had a black and white and a few danish, all were very good. Anyway, I thought I finally found a decent bagel shop judging by the reviews but the search will have to continue. Never mind trying to find a good bialy. Pros: Boars Head products, home made foods Cons: not authentic NY bagels
