I have been a pizza afficianado and amateur pizza maker for 20 years. I know my pizza. This is horrible pizza. The soul of a pizza is the crust. A good pizza maker craves the high heat of a coal or wood stove to get that bubbly crust, hint of smoke, outside a yeasty moist crumb. Tutta Bella seemed to have the right oven, but it did not have a good dough or a pizza maker who knows the first thing about making a pizza. The pie arrived with an inspid and limp dough. There was no crust. I picking up a slice and it drooped like a limp noodle. It was dramatically undercooked. LIkewise, the top was not adequatley cooked. That's what happens when you dont knead your dough well, have long rises, or let your dough sit on a preheated oven. The pizza maker had the pie on a paddle with the top facing the flame. NO, NO, NO. A terribel shame. A waste of an good oven.
