I'll try my best not to sound like I'm some Marche employee trying to boast about the restaurant. The truth is, I'm just a NYC foodie (who recently moved back to Cali) spoiled by the bountiful array of excellence, ingenuity, and gastronomy found in The Big Apple. When I first ate at Marche Moderne I certainly expected a positive experience, especially since I had previously met the Chef and discovered that he AND his wife were BOTH chefs... one a classic French chef while the other a pastry chef. ""What a combination!!"" I exclaimed to myself and so there you have it... I had very high expectations to begin with... but when my wife and I proceeded into our meal I kept saying, ""I can't believe how good this is!"" The dishes were so well balanced; the natural flavors of all the ingredients were so perfectly enhanced that I almost forgot the dishes were compositions of different items prepared by mere mortals!... And then it dawned on me, that Chef Florent and his wife Amelia were sent by the gods to bless the O.C. with a taste of heaven. We've already spent my wife's birthday and our wedding anniversary there... and I'm just looking for excuses to go again... I wish I could do each dish we ate justice by describing them in words but that would be like trying to describe what the grand canyon looks like at sunset to a blind person... you might understand what it is but you wouldn't get all the amazing colors and subtle qualities between light & shadow... and yes, the food is THAT good... well, at least to me it is... so to each their own. But if you're anything like me than you'll understand and give credit where credit's due. The bottom line: They've only just arrived and are graciously letting us savor their world, and for that, I can only say, ""Merci beaucoup!"" & ""Vive ut vivas!!!""
