Tonight we went to Bistro 64 after we heard that the old Cosmopolitan crew, under new ownership, had stepped it up a bit. We wanted to see for ourselves. We dine out a lot and always loved the Cosmo but wanted to give the new entity some time to settle in before we visited. After tonight, I'm sad that we actually waited. It was phenomenal. From the time the valet opened our car door to the time we got back into our car, Bistro 64 treated us to the best experience we've ever had in the Triangle over the last 15 years. Bobby Hinton was jammin' in the bar. Matt makes great cocktails. When we were seated, we were greeted by an ""amuse"" from the chef of casaba melon with aged balsamic vinegar. The menu is unbelievable. It was so hard to choose what we were going to eat. The wine list is outstanding. Some older vintage wines and some newer cult wines. Our server was a charming lady,Mikio. Ask for her. Her service was hospitable, polished, and efficient. And she never stopped smiling. Half way through our meal, the new owner, Will Massey, stopped by to confirm that ""everything was perfect"". And it was indeed. Every morsel of food placed on our table was proof that it really can be ---That good! Bravo chef! We will be back! Pros: FOOD! SERVICE! ENTERTAINMENT! GREAT WINE LIST!
