On our last day in Maui, my husband and I had some time to waste before our redeye flight. We decided to spend the evening in Paia, not realizing that most of the shops would be closed. Nevertheless, we drove past Flatbread Co and decided to stop in for some drinks and pizza since the place was packed. We met one of the owners who manages the place while we were waiting, and he explained the simple yet impressive concept of using fresh, mostly organic ingredients and making the pizza the centerpiece. Although it was crowded, there was a feeling of being in someone's home. The pizza oven occupies a large part of the restaurant and is visible from all corners (my husband was extremely impressed with that). Behind that, the prep kitchen is also visible. Those features work really well to create a great, comfortable, open atmosphere. The fact that they're involved in the community is also great. Most of all, the pizza (especially the crust) was awesome, with tasty, organic, fresh ingredients. We didn't have high expections coming from NY-style pizza we're used to, but this place was a definite success. Pros: Pizza, the open concept Cons: Alcohol variety lacking
