We were told when on the strip that Diablo's was a fun place to stop & have a Margarita, watch the world go by & have a bite to eat. So when we were on the strip the last time, we stopped in to see what the buzz was about. We were lucky enough to get a table right on the rail overlooking the sidewalk so we could people watch while we were there, our favorite past time while on the strip. This turned out to be the only bright spot in our visit. To begin with, I'm sick of restaurants thinking that SALT is a main ingredient in any dish. I know that cooking shows are popularizing the use of sea salt, kosher salt & etc but, it's still NOT supposed to be the main ingredient! Over salting everything is not good for the body & doesn't always inhance the taste. Some customers cannot tolerate that much salt & dishes should be allowed to be salted by the patron. Our Margarita tasted like salt & lime with little tequila or anything else. Ordered my Margarita blended NO SALT & still tasted just as salty as my friends. The chips oversalted & salsa alone tasted like salt. Progressed from bad to worse. NO traditional mexican dishes on the menu. I'm a big chili verde fan & there was nothing even close to this on the menu. We each ate half then exchanged plates to taste a variety of the offerings. We both agreed on two things. Both dinners, TOGETHER, had less than 4 oz of meat combined & all we tasted was salt. Everything is overpriced & miniaturized serving size. Disgusted, I wanted to send them back but, my cohort did not want to bring attention to us. Drinks small, over priced & poorly mixed, dinners the same, over salted mini meals. Service was poor. The servers are inexperienced & expected a tip just for eventually showing up, & being young & pretty. I might be younger, but, I know good service from bad. We liked the atmosphere, we liked the location (even though we don't really care for the Monte Carlo). I can't imagine being trapped inside!
