Victor's blows away the meat counters at all of the local Ralph's, Albertson's, Von's that I've been to. Their selection isn't necessarily huge and they're closed Sundays, but the butchers are very accommodating with what they do have. They will happily cut, trim, and shape the meat to your specifications. And unlike the guy at Ralphs, the butcher's know the difference between a rib chop and a blade chop. Not the best butcher I've ever been to, but it's certainly the best in my neighborhood.
