Sushi Sasabune's "theme" is that you cannot order anything - diners need to be able to "trust" the sushi chef and he will decide what to serve you from the freshest fish available on that day.
This is a very clever marketing scheme, one which allows him to make a healthy profit. What he does is fill you up with cheaper varieties of seafood first. If you're full after three to five orders, then he makes a profit. He brings out the more expensive varieties after you've consumed several orders and he's ensured his profit.
Please note, that the sushi is good, but if you are looking for specific types of sushi (toro, ikura, etc.) you won't be served it till the very end. This has prevented me from going there when I just want a small snack.
