Saigon Springs was the first of several Vietnamese restaurants visited (5 in the Springs and 1 in Grand Junction). It compares to about the same as all the others- fair prices, huge portions, tasty meals, and authentic. All are owned, managed, or worked by Vietnamese. Dont expect the best service or atmosphere in any of these places, but the people are friendly and try hard to please you. Definitely get the Pho Tai on a cold winters night (large soup of rice noodles, beef, cilantro, onions, wedge of lime, and beef broth. Or if youre with three or more, get the appetizer mood going with the spring rolls that you have to make by yourself (served with rice paper, variety of meats and veggies, about $9.00). Overall, this place is good enough as Vietnamese restaurants go.
