My parents came to Longmont to visit from Kansas this past week and I was looking for the perfect outdoor eating experience: I could not have picked a better place than the Red Lion Restaurant. It was a beautiful sunny day we showed up a little after 6:00 and were seated outside on the lawn. Just off to the side of the table was a wonderful stairwell leading down along Boulder Creek. Throughout the meal we were serenaded by the wonderful sounds of the rushing creek, very therapeutic. No matter which way you were seated there was a beautful views of either the rushing creek, the nearby mountain tops, the lush flower bed or the rustic restaurant . The meal took the experience to another level. We started with the escargot. It was the first time that I had ever tried them they were excellent. We moved on to our entrees, I had the Halibut which was the fish special for the evening, it was perfectly cooked with great flavor. The table favorite though was the Buffalo Ribeye ordered by my mother, the meat came out to temperature. She often finds that she has to return meat that has been improperly cooked, not here! The flavor was devine and we were all a tad jealous because of her superior ordering skills. We followed up our entrees with coffee and dessert. This time I won as I ordered the table favorite: White Chocolate Triple Berry Bash I believe, wow, mouth watering good. Service was well timed and attentive throughout the meal. I never felt rushed as we were there to enjoy ourselves and the beautiful setting. All and all a great night, I would definetly recommend to others. We capped off our evening with a nice stroll along the River Walk.
