I have a favorite Vietnamese dish, and that is bun ga xao. (Stir-fried chicken on rice noodles with assorted vegetables). I have tried this dish at a number of Seattle area restaurants, and not one prepares it nearly as well as Renton's Pho Saigon. The chicken is always moist, tender, and flavorful, and they do not scrimp on quantity. Basil is used (whereas some restaurants use mint; I prefer the basil). All of the ingredients are as fresh as can be, and the combination of flavors (cucumber, carrots, peanuts, basil, chicken, rice noodles, fish sauce) is complex. This dish is available with or without fresh ginger. A generous serving of fish sauce is provided.
