Pick a plce to sit. Choose from ""the bar"", tatami rooms, tables, or ""American-style"" tatami rooms. Then order either one of the set menus or a la carte. Watch the waiter perform his magic. Think sushi bar, except it's all tempura (they make it clear that they serve no sushi or teriyaki here). The tempura is light and not greasy at all. The chef waits until you finish one course so that the tempura stays fresh and hot. Try the eel tempura. It's definitely something one doesn't find normally. One can choose to dip the tempura into a normal sauce OR lightly season it with one of the specialty salts. I can't wait to go back!
