I travel to Japan (Tokyo, Kobe, etc...) 2 times each year and stay with a Japanese family each time. As a result, I fancy myself a connoiseur of sushi done right. Here it is! Whenever I travel to visit my mother in Scottsdale, I head here first! The main chef/owner traveled the country to first observe how they were preparing the sushi here in the States (where they get their fish supplied from, ""Americanized"" rolls - just add some mayo and spice boys, and the Amerika-jin will love 'em!) - before opening his own. (BTW - he does claim to have studied in Japan as a sushi chef). The research paid. At least he and most others of the chefs to date have been Japanese, and can actually understand you if you choose to speak Japanese in their Japanese restaurant! (A rare find these days!)
