One of the keys to good sushi is fresh fish. Some restaurants get their fish frozen and thaw it (you can usually tell in the consistency and some of the ""bleeding"" of fish like tuna) and this is edible for me, although not preferred. The sushi we got from here tasted like it had been sitting out on the deck of the boat during a heat wave. My husband had picked up some sushi ""to go"", as we were trying to find a decent sushi restaurant after moving to the area from L.A. After the second piece, I had to throw the rest of the order away. The yellowtail didn't seem to be fresh and was somewhat rubbery and a little fishy. Yellowtail should have a light flavor and should be very soft. I love food so it's rare that I throw it away if it's mostly edible, but this went into the trash.
