We were looking for a quiet restaurant. Drove all over town and happened upon Galileo's. WOW, I was so happy we risked it. The food was divine. The menu was varied with pastas, fish, salads something for everyone. Portions are enormous. You can tell the owner actually cares if you are happy with your meal. I love it when there is a balance between attentive service and great food. Each can make or break the experience. If you are not that hungry I'd recommend splitting an entr?e, then saving room for the most remarkable Tiramisu on earth. Honestly I?d go back alone for desert and Chianti. Maybe I?ll take a book. In fact next time I'm in Pueblo or within 20 miles, I'll stop in.
Pros: True fine dining without the price.
Cons: Tucked away not easy to find but worth the search.
