El Rinconcito is a place I first tried after moving to Bellingham about 8 years ago. It is in a mini-mall at Yew and Alabama. Owned by the Robles family, the food is great, the portions are big (too big probably) and the salsa is AWESOME. Luis is often there and is probably the most friendly host I've ever encountered at a restaurant. Make yourself a regular, and you'll get to know him.
I already mentioned the salsa. It's made fresh daily and therefore it changes a bit... the basic flavor of the salsa is consistent (and wonderful), but the heat varies according to the heat of the peppers used that day. Really wonderful stuff.
I've had a variety of things on the menu, but considering how many times I'm been there, I haven't branched out enough. I get stuck in the same ruts because I like the dishes I've had so much. The basic tacos, enchiladas, burritos, tamales, chimichangas, and tostadas are all great. The house burrito is a large seafood burrito with crab and shrimp. I'm a big guy, and this one certainly fills me up.
I also love the combos. There are probably 20 of them, or more... you can get 3 tacos, or a taco and a burrito, or 2 burritos, etc. It's a great way to try out their many offerings.
The fajitas... I have to make a comment about those. They are really good--I usually get the beek. They are pretty similar to the carne asada tacos.
As you can see, I wholeheartedly recommend El Rinconcito. As much as I've rave about the food, I am even more impressed with the service.
