In the Hotel Columbia is the surprising Cosmopolitan. Crowded yet very efficiently run, Cosmopolitan has much to offer.
I had warm marinated beets with goat cheese and a balsamic reduction on spring greens. Delicious and light. For my main I had a pan seared red snapper fillet on sauteed spinach with new potatoes and morrels with a light garlic, butter and herbal sauce. A nice sized portion that was all I was hoping for. I had a '99 Rioja, though I can't remember which one, that fit the bill nicely.
For dessert I had a small round blueberry pie with sour creme ice creme.
While this was tasty, I though it could have been a bit brighter in flavor.
Cappuccino was good, but not as good as the Lavazza version I had at the festival.
$75 with tip. Perhaps a bit expensive, but Telluride restaurants are seldom cheap.
