Weird! The guy who seemingly owned and definitely operated the place is now just part of the kitchen help. Some of the people, maybe all, who used to work there have been replaced and the new owner is not as friendly. The sauces are still very good, no change there. The vegetables, on the other hand, are a different story. For instance: the Chicken w/ Mixed Vegetables used to be consistent but now varies from visit to visit. On one visit, when I asked why there was no Bok Choy in the mix the owner made a joke to the others in Chinese. My next visit, the dish was overloaded with Bok Choy and sparse on the other veggies it normally contained. The next couple of visits had a decent variety of veggies but, again, was inconsistent compared to the way the dish used to be served. For a couple of years before the ownership changed this was my favorite Chinese food in Chattanooga. I made a point to go there at least once every two weeks and usually more. Now, I don't go at all and do my wokking at home, from scratch (no bottled sauce), in a round bottom, carbon steel wok. My business was not a huge loss as I always dined alone. Now that I'm using my wok at home more it's building great patina and I'm getting better at the sauces. I've also gotten some more Chinese cookbooks and have expanded my realm of menu choices. I hope the laughing owner is happy he lost my cumulative business.
