The skirt steak is so ever slightly seasoned so that you can enjoy the actual flavor of the meat. I would recommend it cooked medium to medium rare. There is no butter or other grease that is found in typical steak establishments such as Morton's where you leave feeling weighed down and heavy. Rather, you feel light even after downing this steak---only drawback---your taste buds will have you coming back for more! I try to get out to Brea once a week for this specific dish. \r
Their bread and dipping sauce is slightly lemony and simultaneously fresh. If you are looking for something lighter than an entire skirt steak, I recommend their skirt steak salad---where half the amount of meat is placed delicately on a salad with a delicious dressing drizzled over. Calamari is a great appetizer as is the smoked Provolone (however, the provolone might fill you up). I can't speak for the other items, but you will not regret trying the skirt steak. It really is THAT good!
