For years, coffee nerds made pilgrimages to the Bay Area, returning to New York with tales of a place that serves its coffee within 48 hours of roasting, using only small-batch, organic, shade-grown beans and preparing each order one cup at a time. Blue Bottle’s Williamsburg location is the first outside of California and does things just as the one on the West Coast, using ceramic drippers to individually prepare cups of coffee and a vintage espresso machine for espresso drinks. The space itself has an industrial, modern feel, with a tall communal table and no seats, plus a large back space for roasting operations.
