After a great deal of searching, we have finally discovered a Jax restaurant that is not afraid to be inventive! Do not order the typical Italian fare and skip the appetizers; go straight to the Chefs specialties. I ordered the Country Chickena full chicken breast stuffed with Italian sausage and mashed potatoes and covered by a margarita sauce (basically a hunters sauce livened up with tequila, capers and garlic cloves). It sounds weird, but it was delicious. My wife was going to order a crab-stuffed salmon dish, but she ended up with a salmon filet draped in grilled onions and peppers and covered by a bourbon sauce. The sauce was not too sweet and allowed the salmon flavor to come through. It was equally delicious. If you are looking for an interesting meal in the Jax area, try Amore before Dolphin Depot or Bonefish.
