Rodrigo Olmedo, Chef Owner of Ale' Roma Cucina, started his culinary career back in 1982 at Ferrantelli Ristorante in San Jan Capistrano. He became Sous Chef at their new location in Dana Point in 1987 under the supervision of many Italian chefs that came from the Old Country to brin the Italian flavors to the West Coast. His cooking is very versitile from the Old Italian School, to the contemporary influences from every side of the globe. His major accomplishment is a very flavorful combination of ingredients that make the food truly Italian and unique tasting, as if you were visiting Rome.
